Built to Last

Trusted by real craftsmen

This is a 2-piece kitchen knife set — one carving knife and one utility knife, both running 11 inches overall. Both blades are hand-forged from raindrop Damascus steel and fitted with bone and rosewood handles on full tang construction. Same length, same handle construction, two distinct blade profiles built for different tasks.

The Blades

Both blades are forged from layered 1095 high-carbon steel and 15N20 nickel alloy. The raindrop pattern forms during the grinding process — circular depressions cut across the stacked steel billet before the final forging pass. Hammering stretches those circles into teardrop shapes across the full blade surface. Acid etching after forging sharpens the contrast between light and dark layers, making the pattern clear and deep from heel to tip. Every blade carries a slightly different raindrop formation — a direct result of hand forging.

Heat treatment brings both blades to 58–60 HRC. That range holds a sharp working edge through daily kitchen use without becoming brittle under regular cutting load.

What Each Knife Does

The carving knife runs 11 inches overall with a long, narrow blade designed for clean, controlled slicing. It pulls through roasts, smoked brisket, whole turkey, leg of lamb, and large fish fillets in single smooth strokes. The narrow profile reduces drag across the cut surface and keeps each slice uniform in thickness. Less tearing, cleaner portions, better presentation.

The utility knife also runs 11 inches overall but carries a shorter, more compact blade profile. It handles trimming fat from proteins, slicing fruit, portioning smaller cuts, and any detail prep work where a full carving knife is too long and a paring knife is too short. It fills the gap between the two extremes cleanly.

Together the two knives cover the full range from large protein carving to precise detail prep — a complete two-blade system for serious kitchen work.

Handle Material

Both handles are built from a combination of natural bone and rosewood. Bone provides a smooth, dense surface that stays firm and dry in hand during active prep. Rosewood adds structural hardness and a deep grain contrast that makes each handle visually distinct. The two materials are joined flush — no gaps, no movement between them.

The grain and bone pattern varies across every handle — no two knives look identical. The surface stays secure in both a pinch grip at the bolster and a full palm grip toward the rear of the handle.

Full Tang Construction

Both knives are full tang. The blade steel runs the complete 11-inch length from tip to handle end, pinned through the bone and rosewood for permanent structural integrity. Full tang eliminates blade flex at the handle junction and keeps weight distributed evenly across the full knife length — important during long carving sessions where handle fatigue and blade wobble affect cut quality.

FAQs

How is this 2-piece set different from other Damascus knife sets in this collection? This is the only 2-piece configuration in the collection and the only set where both knives run the same 11-inch overall length. Every other set in the collection includes three or more blades across a wider size range.

Why do both knives run the same overall length if they serve different purposes?

The 11-inch overall length on both knives comes from the handle length compensating for the difference in blade profiles. The carving knife carries a longer, narrower blade.

Is bone a safe and hygienic handle material for kitchen use?

Yes. Bone used in knife handles is treated, sealed, and polished — it does not have open pores that absorb bacteria or food moisture during normal use. Wipe clean after each use and dry immediately. Do not soak the handle in water for extended periods.

Can these knives handle both raw and cooked proteins?

Yes. The carving knife is optimized for slicing cooked roasts and large proteins. The utility knife handles trimming raw proteins, removing fat, and portioning before cooking. Together they cover both stages of protein preparation.

What sharpening method works best for these knives?

Use a whetstone at 15–20 degrees per side for both blades. Hone with a leather strop between whetstone sessions to keep the edge aligned. Avoid pull-through sharpeners — they remove steel unevenly and damage the raindrop Damascus layer structure over time.

Product Care for JW SteelCrafts Hand-Forged Products

To ensure the longevity and beauty of your hand-forged JW SteelCrafts products, follow these essential care instructions:

  1. Regular Cleaning
Wipe your knives, swords, axes, and rings with a soft cloth to remove dust and debris. For deeper cleaning, use a mild soap solution and a non-abrasive cloth. Avoid using harsh chemicals or abrasives that could damage the steel’s finish.
  2. Dry Thoroughly
After cleaning, ensure your product is completely dried. This helps prevent water spots, rust, or corrosion, particularly on blades and steel surfaces exposed to moisture.
  3. Proper Storage
Store your hand-forged products in a dry, cool place to prevent oxidation or rust. For long-term storage, consider applying a thin layer of oil (e.g., mineral oil or gun oil) to the metal surfaces, or using a rust inhibitor. When storing knives and swords, keep them in protective sheaths or pouches to prevent contact with other materials.
  4. Avoid Impact
While designed for strength and durability, avoid dropping or striking your steel products against hard surfaces. This can cause damage to the blade, edge, or overall integrity of the piece.
  5. Edge Maintenance (For Knives & Swords)
Periodically sharpen the blades to maintain their cutting edge. Use a proper sharpening stone or take your product to a professional for maintenance. Always sharpen in the correct direction to preserve the blade’s integrity.
  6. Routine Inspection
Regularly inspect your products for any signs of wear, rust, or damage. If you notice any issues, reach out to us for maintenance, restoration, or repair services.

By following these care instructions, your JW SteelCrafts products will retain their craftsmanship, functionality, and beauty for years to come.
