This 5-piece Damascus kitchen knife set covers every cutting task in one configuration. A heavy Chinese cleaver handles the raw power work. A 12-inch long slicer handles clean, controlled carving. Every blade is hand-forged from pattern-welded Damascus steel and fitted with natural olive wood handles and brass bolsters.

The Blades

All five blades are forged from layered 1095 high-carbon steel and 15N20 nickel alloy. The two steels are stacked, heated, and hammer-welded into a single billet. Repeated folding multiplies the layers and strengthens the grain structure throughout the steel. The final blade is acid-etched to reveal the Damascus pattern beneath the surface — flowing lines and contrast bands that run the full length of each knife.

Heat treatment brings every blade to 58–60 HRC. That hardness holds a sharp working edge through daily kitchen use without chipping under moderate impact.

What Each Knife Does

The Chinese cleaver is the workhorse of the set. Its wide, heavy blade drops through dense root vegetables, whole poultry joints, and thick meat cuts with full flat-edge contact on each stroke. The weighted spine reduces the effort needed on each chop.

The 12-inch long slicer is built for carving and portioning. Its narrow blade pulls cleanly through roasts, smoked brisket, whole turkey, and large fish in long single strokes. Less drag means cleaner slice faces and more consistent portions.

The chef knife handles general prep — dicing onions, breaking down vegetables, slicing proteins before cooking. It is the most-used blade in the set for daily kitchen work.

The utility knife fills the gap between the chef knife and paring knife. It trims fat, portions smaller cuts, and handles mid-size prep tasks where a full chef knife is too large.

The paring knife at 9 inches overall is the smallest blade in the set. It handles peeling, scoring, trimming, and any detail work that needs a short, controlled blade close to the hand.

Handle Material

Each knife is fitted with a natural olive wood handle. Olive wood is a dense, close-grained hardwood with natural oils that resist moisture absorption. The grain pattern varies across each handle — no two pieces look exactly alike. The surface stays firm and dry in hand, even during extended prep sessions.

Bolster and Construction

Brass bolsters sit at the blade-to-handle junction on each knife. The brass adds forward balance weight and acts as a finger guard during chopping and slicing strokes. It also adds a warm visual contrast against the olive wood and Damascus steel.

Every knife in the set is full tang. The blade steel runs the complete length of the handle, pinned through the olive wood for permanent, solid construction. Full tang prevents handle separation under load and distributes blade weight evenly across the full knife length.
