This 6-piece Damascus kitchen knife set pairs long slicing reach with tight detail control in one complete kit. Six distinct blade profiles cover heavy chopping, bread slicing, fish work, and fine daily prep. The largest knife runs 10 inches. The smallest runs 8 inches overall. Every blade is forged from layered Damascus steel and fitted with white bone and red wood handles on full tang construction. A leather roll and a sharpener are included.

The Blades

All six blades are forged from layered 1095 high-carbon steel and 15N20 nickel alloy. The two steels are stacked, heated, and hammer-welded into a single solid billet. Repeated folding strengthens the grain structure and bonds the layers permanently throughout the steel. Acid etching after forging reveals the flowing Damascus surface pattern across each blade — flowing contrast lines that run the full length of every knife. Each blade carries a slightly different pattern from the forging process.

Heat treatment brings each blade to 58–60 HRC — sharp enough for fine slicing work, tough enough for sustained daily kitchen use without edge failure.

What Each Knife Does

The 10-inch carving and slicing knife is the longest blade in the set. Its narrow profile pulls cleanly through roasts, brisket, whole turkey, and large fish in single long strokes — less drag, cleaner slice faces, and more consistent portions.

The chef knife is the primary daily prep blade. It handles slicing proteins, breaking down vegetables, mincing herbs, and the bulk of general kitchen tasks during active cooking. The curved belly suits both rocking and push cuts.

The bread knife carries a serrated edge that cuts cleanly through crusty loaves and soft interiors without crushing or tearing. It also handles tomatoes, citrus, and layered soft desserts cleanly.

The fillet knife is the most precise blade in the set. Its narrow, flexible profile follows bone contours during filleting and handles fine trimming work where a wider blade creates unnecessary drag. For a dedicated standalone fillet blade, the JW SteelCrafts custom fillet knife is available separately.

The cleaver handles the heaviest work. Its wide rectangular blade drives through dense vegetables, thick meat cuts, and poultry joints with full flat-edge contact on each stroke. The wide flat also scoops prepped ingredients from board to pan efficiently.

The 8-inch utility knife is the smallest blade in the set. It handles trimming fat, portioning smaller cuts, slicing fruit, and mid-size prep tasks where larger knives are too cumbersome for comfortable control.

Handle Material

Each knife combines white bone and red wood in a two-tone handle construction. White bone provides a smooth, dense grip surface that stays firm and dry during active prep. The red wood end cap adds structural reinforcement at the rear of the handle and creates a bold color contrast against the bone. The combination gives each handle a distinctive two-tone appearance that varies slightly across every knife in the set.

The Leather Roll and Sharpener

The leather roll holds all six knives securely in individual blade pockets. It rolls tight and ties closed for safe transport during outdoor cooking, catering setups, and professional kitchen travel. The included sharpener keeps every blade in the set at working sharpness between full whetstone sessions — a practical addition that makes the kit self-contained from day one.

Full Tang Construction

Every knife is full tang. The blade steel runs the complete length from tip to handle end, pinned through the handle material for permanent structural integrity. Full tang eliminates blade flex at the junction and distributes weight evenly across the full knife length.

FAQs

How is this set different from the 6-piece rosewood Damascus set in this collection?

The rosewood set uses natural rosewood handles without a leather roll or sharpener. This set uses white bone and red wood handles and ships with both a leather roll and a sharpener included, a more complete kit out of the box.

Why does this set include a sharpener alongside the leather roll?

The sharpener keeps every blade at working sharpness between full whetstone sessions.

What makes white bone and red wood a practical handle combination?

Bone provides a dense, moisture-resistant grip surface while red wood reinforces the rear of the handle structurally.

Is the fillet knife suitable for both fish and meat trimming?

Yes, the narrow flexible blade handles fish filleting and fine meat trimming equally well. For dedicated high-volume fish work, the standalone fillet knife in the collection offers a more specialized profile.

Product Care for JW SteelCrafts Hand-Forged Products

To ensure the longevity and beauty of your hand-forged JW SteelCrafts products, follow these essential care instructions:

  1. Regular Cleaning
Wipe your knives, swords, axes, and rings with a soft cloth to remove dust and debris. For deeper cleaning, use a mild soap solution and a non-abrasive cloth. Avoid using harsh chemicals or abrasives that could damage the steel’s finish.
  2. Dry Thoroughly
After cleaning, ensure your product is completely dried. This helps prevent water spots, rust, or corrosion, particularly on blades and steel surfaces exposed to moisture.
  3. Proper Storage
Store your hand-forged products in a dry, cool place to prevent oxidation or rust. For long-term storage, consider applying a thin layer of oil (e.g., mineral oil or gun oil) to the metal surfaces, or using a rust inhibitor. When storing knives and swords, keep them in protective sheaths or pouches to prevent contact with other materials.
  4. Avoid Impact
While designed for strength and durability, avoid dropping or striking your steel products against hard surfaces. This can cause damage to the blade, edge, or overall integrity of the piece.
  5. Edge Maintenance (For Knives & Swords)
Periodically sharpen the blades to maintain their cutting edge. Use a proper sharpening stone or take your product to a professional for maintenance. Always sharpen in the correct direction to preserve the blade’s integrity.
  6. Routine Inspection
Regularly inspect your products for any signs of wear, rust, or damage. If you notice any issues, reach out to us for maintenance, restoration, or repair services.

By following these care instructions, your JW SteelCrafts products will retain their craftsmanship, functionality, and beauty for years to come.
