The Ko-Santoku — A Shorter, Sharper All-Rounder

The Santoku knife came out of Japan in the mid-20th century as a home cook's answer to the cleaver and chef's knife. "Ko" means small, making the Ko-Santoku a compact version built for control and precision. It became popular because it handles almost any prep task: vegetables, boneless meat, herbs, and fine cuts. The shorter blade gives more control without losing cutting power.

The blade is forged carbon steel with a black powder coat finish. Carbon steel gets sharper than standard stainless and holds that edge longer with proper care.
