This is a single knife — one hand-forged gyuto chef knife built for daily kitchen use. The 7-inch ladder Damascus blade handles slicing, push cutting, and detailed prep. The 5-inch red Micarta handle with a mosaic pin keeps it secure and balanced in hand. Total length runs 12 inches from tip to handle end.
The Blade
The blade runs 7 inches and is hand-forged from layered high-carbon Damascus steel using 1095 carbon steel and 15N20 nickel alloy. The ladder pattern forms during the forging process through controlled grinding across the stacked billet. That grinding cuts into the layers at regular intervals, and when the billet is hammered flat again, the interrupted layers stretch into a clean linear pattern across the blade surface. Each blade carries a slightly different ladder formation — no two are identical.
Acid etching after forging deepens the contrast between light and dark layers, making the ladder pattern sharp and clear from heel to tip. Heat treatment brings the blade to 58–60 HRC — sharp enough for fine slicing work, tough enough for repeated daily use without chipping.
The gyuto profile gives this knife a curved belly that suits rocking cuts and a pointed tip that handles trimming and precision work. It moves through vegetables, boneless proteins, and fish with equal ease. The double bevel edge performs the same on both right and left hands.
The Handle
The 5-inch handle is made from red Micarta. Micarta is a composite material built from layers of linen or canvas fabric saturated with resin and compressed under heat. The result is a handle that is fully impervious to moisture, does not warp or crack, and maintains its grip surface even with wet hands.
Red Micarta has a slightly textured surface that improves grip security during heavy prep without being abrasive. It does not absorb odors, bacteria, or oils from food — it wipes clean and stays stable in shape over years of regular use.
A mosaic pin sits through the handle at the mid-point. The pin is decorative and structural — it locks the handle material to the tang and adds a distinctive detail that sets this knife apart from standard production handles.
The Bolster and Full Tang
The steel bolster sits flush at the blade-to-handle junction. It adds forward balance weight, acts as a finger guard during chopping strokes, and reinforces the most stressed point of the knife. The fit between bolster and handle is tight — no gap, no movement.
This knife is full tang. The blade steel runs the complete 12-inch length from tip to the rear of the handle, pinned through the red Micarta for permanent construction. Full tang eliminates blade flex at the junction and keeps weight distributed evenly across the full length.

FAQs
Is this sold as a single knife or part of a set?
This is a single knife only. You receive one 12-inch ladder Damascus gyuto chef knife — no additional blades, no set. If you need a multi-knife configuration, other Damascus sets are available in the collection.
What is ladder Damascus pattern?
Ladder Damascus forms when a layered steel billet is ground with evenly spaced grooves across its width before the final forging pass. The hammer flattens those grooves back out and stretches the interrupted layers into a repeating linear pattern — similar to the rungs of a ladder across the blade surface.
What makes red Micarta a good handle material?
Micarta does not absorb moisture, does not warp, and does not require oiling or conditioning. It holds its grip surface when wet and stays dimensionally stable over years of use. It outlasts most natural wood handles in active kitchen conditions.
What does the mosaic pin do?
The mosaic pin locks the handle material to the full tang and adds a decorative element unique to each knife. Mosaic pins are made from layered metal rods cut to reveal a pattern at the face — the design varies slightly between pins.
Product Care for JW SteelCrafts Hand-Forged Products
To ensure the longevity and beauty of your hand-forged JW SteelCrafts products, follow these essential care instructions:
- Regular Cleaning
Wipe your knives, swords, axes, and rings with a soft cloth to remove dust and debris. For deeper cleaning, use a mild soap solution and a non-abrasive cloth. Avoid using harsh chemicals or abrasives that could damage the steel’s finish. - Dry Thoroughly
After cleaning, ensure your product is completely dried. This helps prevent water spots, rust, or corrosion, particularly on blades and steel surfaces exposed to moisture. - Proper Storage
Store your hand-forged products in a dry, cool place to prevent oxidation or rust. For long-term storage, consider applying a thin layer of oil (e.g., mineral oil or gun oil) to the metal surfaces, or using a rust inhibitor. When storing knives and swords, keep them in protective sheaths or pouches to prevent contact with other materials. - Avoid Impact
While designed for strength and durability, avoid dropping or striking your steel products against hard surfaces. This can cause damage to the blade, edge, or overall integrity of the piece. - Edge Maintenance (For Knives & Swords)
Periodically sharpen the blades to maintain their cutting edge. Use a proper sharpening stone or take your product to a professional for maintenance. Always sharpen in the correct direction to preserve the blade’s integrity. - Routine Inspection
Regularly inspect your products for any signs of wear, rust, or damage. If you notice any issues, reach out to us for maintenance, restoration, or repair services.
By following these care instructions, your JW SteelCrafts products will retain their craftsmanship, functionality, and beauty for years to come.
